The 90 companies represent more than 1200 jobs
working in the activities of fish wholesalers, filleting and/or
handling of Seafood Products in the Capécure zone.
Around 130 000 tons of fresh fish are treated each year by these companies, that is to say 30% of the national total.
A majority of the fresh fish companies carry out manual filleting of the fish although many of them are equipped with filleting machines.
It is more and more frequent for fish wholesalers to propose products which
are packed in small containers under controlled atmosphere, as
well as added value products (roast fish, brochettes, etc.).
